As Miami Vibes sailed away on Sun Princess, they had the pleasure of sitting down with the one and only Tony Gemignani, a 13-time World Pizza Champion, at a special pizza demo. Known for his incredible mastery of various pizza styles, Chef Tony has become an icon in the culinary world. Here’s a glimpse into our delightful conversation with the man behind the dough.



The Art of Balance

When asked about what sets his pizzas apart from the competition and keeps him winning championship titles year after year, Tony explained that balance is key. “Pizza is always about balance. Having great dough, having great ingredients, but nothing over the top,” he shared. Tony believes that while the ingredients are crucial, it's their harmony that makes the magic happen. "You might have gorgonzola or figs, but it’s not about overpowering flavors. It’s about making sure everything is balanced."


He also emphasized the artistry that goes into his pizzas even after they come out of the oven. “It’s what goes on after that makes your pizza beautiful and flavorful,” Tony said, highlighting the attention to detail that separates his creations from the typical chains.


A Love for All Pizza Styles

With expertise spanning from Neapolitan to Chicago deep dish, Tony has truly mastered the pizza spectrum. But which one is his favorite? “It’s like asking a dad who his favorite child is,” he joked. Although Tony couldn’t choose just one, he did admit a fondness for Detroit-style pizza, which has been gaining popularity across the world. “Old school coal-fired pizzas are also close to my heart,” he added, referring to the style he often prepares at his San Francisco pizzeria.



A Journey Fueled by Passion

Tony’s love for pizza started young, and it’s a passion that’s only grown over his 33 years in the industry. “My brother got me into the business when I was 17. I didn’t know what I wanted to do out of high school, but I fell in love with it,” he reminisced. His mom’s cooking and his grandfather’s farming background instilled in him a respect for fresh ingredients and a dedication to hard work—foundations that have shaped his career.


Memorable Moments and Words of Wisdom

Reflecting on his career, Tony fondly recalled winning a pizza championship in Naples in 2007. “Winning in Naples was huge because nobody outside of Naples had done it. It was exciting but also intimidating, like ‘grab your cup and get out,’” he laughed, referencing the competitive intensity of the local pizza scene.


For aspiring pizzaioli, Tony’s advice is simple: immerse yourself in the culture. “Take the trip to Naples, New York, or Italy. Get inspired, feel the heat in the kitchens,” he recommended. He believes that no online recipe or video can replace the authenticity and experience of being hands-on.


What’s Next for Tony?

Tony’s pizza empire is expanding with his franchise, Slice House, which features elevated designer slices. “We’ve got locations coming up all over LA, Tennessee, Arizona, Colorado, and Utah,” Tony revealed. With 150 locations in development, his concept is catching on fast.
